I'm not sure Hannibal has been cancelled so much as they only ever intended it to run for 3 seasons anyway. This season really has felt like the third act so far. And Bryan Fuller has a new job with American Gods that he's moving on to anyway.
So I hope they knew this season was the last one some time ago anyway, the story will develop in that way. Fingers crossed anyway.
